How to Prepare Coffee with Chemex
Chemex is a pour-over method, which means that the water passes through a bed of coffee and a filter, normally made out of paper in this case is a very special filter because is heavier and with more leaves than the others, this doesn’t let pass the oil through the filter and it give us a clear cup. The Chemex is a manual, pour-over style glass-container coffeemaker that Peter Schlumbohm a chemist in Germany invented in 1941.
The cup profile of Chemex is aromatic, balanced and clear. Here are the steps to follow to prepare best chemex:
Heat the water to a hundred and eighty Fahrenheit degrees wich is right before boiling.
GRIND
The grind in a chemex have to be a medium grind wich means finest than the French Press, but still not very fine to not stop the dripping process.
We are going to use 20 grams of coffee per 250 mililiters of water using the ratio 1:12.5 wich means that per each gram of coffee you need to pour 12.5 ml of water.
Pre-heat the cup where you are going to serve the coffee, pouring hot water.
Pour hot water on the Chemex filter to eliminate paper flavors and pre-heat the Chemex.
Drop the coffee in to the Chemex and pour water in circles from the center to the sides and back. We are just going to wet the coffee to get the first aromas and flavors until thirty seconds.
After thirty seconds, pour the other part of water in the same way: in circles starting in the center to the sides and back. The idea is that the coffee should look like a volcano upside-down at the final.
Wait for two minutes and thirty seconds to take off the filter. You can always try less or more time looking for the cup of coffee that you like.
Take the Chemex and move it in circles to integrate all the flavors.
